The food in the
Principality of Asturias is among the best in the world, known for its variety,
richness, and its wide offering, which will satisfy the most demanding palates.
Ovetense food is a summary of Asturian food, with food from the sea as
well as from the interior. Special attention should be given to the celebration
of the Disarmament ("el Desarme"), a feast whose origins are uncertain but which,
on October 19th, brings together all ovetenses to eat a plate of chickpeas with
cod and spinach. The carne gobernada (roasted meat) is typical, as well as merluza
a la sidra (hake with cider sauce) that is served in some restaurants with centenary
history. Among the most interesting customs involves eating Paxarines at the exit
of the Cathedral on St. Matthew.
It is also worth mentioning the well-known Fabada, crab cream of soup,
stuffed onions, shellfish soup, bean soup, fish stew, and the delicious hake with
cider sauce.
The most typical desserts of the region are arroz con leche (rice pudding)
and frixuelos (crêpes), which in many places of Asturias are only eaten during
carnival. Among the sweets, the most typical are the carbayones and the well-known
chocolates of Peñalba.
Cider is the oldest and best in the world, according to the experts. It is
consumed daily in chigres, llagares or sidrerías. It is extracted from pressed
apples, fermented in chestnut barrels. The rite of pouring the cider from high
above into a shared wide glass favors and symbolizes comradeship.
